What this room needs from a POS
Coursing and fire timing
Appetisers fired, mains held, the table turned on time. A system that cannot hold and fire by course turns your expo into the bottleneck.
Seat numbers that survive a split check
Six people, one check, then four checks at the end. If seat level ordering is an afterthought your servers will work around it and your data will be worthless.
Tip pooling with an audit trail
Declarations at clock out, distribution calculated by the system, hours against tips per employee per period. This is a payroll compliance question, not a convenience feature.
Handhelds that actually get used
Firing from the table rather than walking to a station is the single change full service owners feel most. It only works if the hardware is fast and the staff trust it.

Toast and Clover figures are reported by Merchant Maverick, Expert Market, POSUSA, business.com and KORONA POS, cross checked against at least two independent sources each, because neither vendor publishes them.
